Plant-based amateurs #6: Couscous salad

Ingredients:

Salad

  • 1 cereal bowl full of mint (finely chopped)
  • 1 cereal bowl full of parsley (finely chopped)
  • 2 cups of couscous (mixed with 2 cups of hot water + 1-2 tbsp of olive oil)
  • 2-3 cups of olives (chopped)
  • 1-2 cucumbers (seeds scraped out with a small spoon, then chopped)
  • 1 cup of cherry tomatoes (chopped into halves or quarters)
  • 1 red onion (finely chopped)
  • 3 tbsp of Garam Masala OR Ras el Hanout

Dressing

  • 5 tbsp of olive oil
  • 2-3 tbsp of ginger syrup (alternatively 1-2 tbsp of sugar + some grated ginger)
  • 2-3 pressed garlic cloves
  • 1 tbsp of chili or chili oil
  • Salt

Optional

  • 1 cup of raisins

Preparation:

  • Most important is to have lots of parsley and mint
  • The ginger syrup adds a nice extra, so better not to skip it
  • Let the couscous cool a bit before to add it to the other ingredients
