Plant-based amateurs #4: Leek soup with soy-based ‘minced meat’

2 servings, super-quick


  • 2 leeks (chopped)
  • 2-3 cloves of garlic (chopped or smashed)
  • 3 tbsp of olive oil
  • approx. 400 ml of veggie stock
  • 200g of soy-based ‘minced meat’ (such as this)
  • approx. 100ml of soy cream for cooking (such as this)
  • salt & pepper
  • parsley for garnish


Fry the garlic and leek in olive oil until the leek is soft. Add veggie stock and minced meat and cook for 3 min. Add soy cream and salt & pepper. If you like, garnish with parsley.

Done in 20 minutes or less!
