2 servings, super-quick

Ingredients:
- 2 leeks (chopped)
- 2-3 cloves of garlic (chopped or smashed)
- 3 tbsp of olive oil
- approx. 400 ml of veggie stock
- 200g of soy-based ‘minced meat’ (such as this)
- approx. 100ml of soy cream for cooking (such as this)
- salt & pepper
- parsley for garnish
Preparation:
Fry the garlic and leek in olive oil until the leek is soft. Add veggie stock and minced meat and cook for 3 min. Add soy cream and salt & pepper. If you like, garnish with parsley.
Done in 20 minutes or less!
